
Garlic Butter Zucchini Grilled Cheese: A Tasty Twist
Instructions
1. Sauté the Zucchini
In a skillet over medium heat, melt 2 tablespoons butter. Add zucchini slices, minced garlic, Italian seasoning, salt, and pepper.
Sauté for 5–7 minutes, or until zucchini is tender and lightly golden. Remove from heat and set aside.
2. Prepare the Skillet
In a clean skillet or on a griddle, melt the remaining 2 tablespoons butter over medium heat.
3. Assemble the Sandwiches
Place a slice of bread in the skillet. Top with:
A layer of mozzarella cheese
A layer of sautéed zucchini
A layer of cheddar cheese
Cover with a second slice of bread.
4. Grill the Sandwiches
Cook for 3–4 minutes on one side, until golden brown.
Carefully flip and cook for another 3–4 minutes, until cheese is fully melted and bread is golden.
5. Serve
Remove from the skillet, slice in half, and garnish with fresh basil if desired. Serve immediately.
Notes
For extra heat: Add sliced jalapeños or a pinch of crushed red pepper flakes to the zucchini mixture.
Cheese variations: Try pepper jack, gouda, or your favorite melting cheese for a unique flavor twist.
